Summer barbecues are always fun and delicious, but for some there is always the question of the amount of calories, fat, sugar in the BBQ recipes and food. Grilled Chicken With Lemon, Garlic and Oregano
For marinade combine some lemon juice, garlic, oregano, salt and pepper, add extra virgin olive oil gradually while continuously whisking the ingredients. Cut off the fat from chicken breasts and season them with salt and pepper. Now sear the chicken legs until they are perfectly brown and move them aside and let them cook there for 15 minutes. When they are cooked, put them in the marinade you prepared and coat them, place them on a platter and cover.
Now grill the chicken breasts for maximum 8 minutes (not too long to burn them, not too few, chicken must be cooked fully!). Now do the same as with chicken legs and voila - your healthy BBQ lunch is ready!
California Turkey Burgers
In a skillet warm olive oil and scallions until they soft, season with salt and pepper and leave to cool down. Add Worcestershire sauce and sour cream, then add ground turkey and gently mix everything. Now make burger patties and grill them for about 5 minutes until you put on the blue cheese. Time to put your burger together; warm the burger buns on grill until they are lightly charred, put your favorite sauce (BBQ, mayonnaise, mustard, ketchup) and toppings (sliced tomato, onions, avocado ...) and enjoy your turkey burger!
Filet Mignon with Blueberry-Bourbon Barbecue Sauce
Heat oil in a saucepan over medium heat, add onions, garlic and jalapenos. Cook until soft then add bourbon and bring to a boil. Cook until reduced, stir in ketchup, blueberries, molasses, brown sugar and allspice. Boil the mixture again and let it simmer while stirring. Now make your rub: combine oil, salt, pepper, thyme. Rub all over the steak and grill for about 3-5 minutes. When done, serve with the delicious blueberry-bourbon BBQ sauce you made. Yummy!
Spicy Thai Barbecue Oysters
In a bowl, combine fish sauce, lime juice, cilantro, sugar, chilies and garlic. Stir all the ingredients until sugar dissolves. After 30 minutes, taste the mixture to ensure that it’s perfect. Now grill the oysters for maximum 5 minutes. Once finished, put them on a cutting board and remove the top shell and make sure, you don't loose the juice. Add a teaspoon of the sauce you prepared to each oyster and grill again for about 4 minutes.
Grilled Grouper With Basil-Lime Pesto
Make pesto: combine basil leaves, parmesan cheese, grated lime rind, fresh lime juice, extra virgin olive oil, garlic and salt. Mix them well in the food processor until finely chopped and set aside. Season your fish with salt and pepper and grill them for 4 minutes per side. When done, serve with the pesto and enjoy!
Grilled Shrimp Skewers With Mango Salsa
Heat olive oil in a saucepan, add garlic, lime juice, salt and pepper. Cook until soft and set aside to cool down. Clean the shrimps (devein them) and put on skewers. Pour the garlic oil on them, cover with plastic and put in the fridge. Now make mango salsa: mix jalapenos, mangos, onions, cilantro and lime juice, add salt and pepper to taste. Mix well and refrigerate. Shrimp is best to marinade at least 6 hours once it hits the grill, and 3 minutes on each side would make them perfectly cooked. Serve with mango salsa and your healthy shrimp skewers are ready.
