The season of outdoor BBQ parties is almost here and it is also a part of a long tradition in many countries all over Europe. Doesn't matter if you roast a whole pig, or grill beef, seafood or vegetables on the hot coals, every European family is looking forward to delicious food prepared with fire. But if you are looking for new flavors, marinades, and sauces to spice up your life, here are our eight quick tips.

Pineapple Marinade

A pineapple marinade adds a fruity flavor to your grilled dishes. It’s a combination of crushed pineapple, honey, soy sauce, cider vinegar, garlic, ginger and powdered cloves. It works best with chicken meat.

Lemon and Rosemary

This one is a classic: just mix lemon, rosemary, olive oil, garlic, salt and pepper and you’ll surely add a lime-herb taste to your dish. This goes well with chicken but may also be used in other types of meat.

If you’re looking for Korean flavors, try a bulgogi marinade: it’s a combination of sugar, soy sauce, sesame oil, garlic, scallions, black pepper, toasted sesame seeds and the country’s trademark sake wine. To make it more Korean, serve your BBQ with lettuce and rice on the side.

For some nice mexican flavors mix cider vinegar, olive oil, cilantro leaves, garlic, lime, black peppercorns, cumin, dried oregano, lime juice and salt. This sauce will work great with lamb, pork and beef.

Teriyaki is a Japanese cooking technique that involves the use of soy sauce, mirin (a certain type of rice wine) and sugar. To make a teriyaki marinade, mix soy sauce, sugar, water, distilled white vinegar, vegetable oil, onion powder, fresh ginger, garlic powder and worcestershire sauce.

Classic Steak

If you want to grill steak, combine red wine vinegar, cooking oil, black pepper, worcestershire sauce, dried oregano, thyme and salt. Make sure that the oil is extra light olive oil or avocado oil to make the steak smoke.

Greek Marinade

To give your grilled food a nice Greek twist, combine lemon juice, olive oil, thyme, oregano, bay leaf, garlic, salt and pepper. Let the meat soak in the sauce for a while to let the flavors sink in. This is best for lambs but is also great for beef.

Now for some Caribbean flavors: mix scallions, onion, oil, white vinegar, hot pepper, thyme leaves, salt, black pepper, nutmeg, hot sauce, cinnamon, sugar and pimento. Blend all the ingredients using your blender or food processor until the mixture is smooth. This marinade adds a little zing to all kinds of meat and poultry.
