Clam bake rezept (meeresfrüchte-barbecue)

Für die Zubereitung dieser köstlichen Meeresfrüchte-Spezialität benötigen Sie Caja China, die Grillbox, die üblicherweise für die Zubereitung eines saftigen Spanferkels verwendet wird. Außerdem bereiten Sie noch 8kg Holzkohle, einen Flüssiganzünder, ein Feuerzeug, Zeitungspapier und einen Eimer mit einer Kapazität von 15 bis 19 cm3 vor.

Als nächstes müssen Sie Ihre Meeresfrüchte und Beilagen einkaufen und vorbereiten. Die Meeresfrüchte und Meeresalgen können Sie bei Santa Rosa Seafood bestellen oder bei Ihrem Lieblings- Fischhändler kaufen.

Hummer Backen am Strand.

Für 6 Portionen benötigen Sie folgendes:

  • 6 frische Hummer (0,5 bis 0,7 kg pro Stück)
  • 36 Kammmuscheln
  • 24 große Garnelen (mit Köpfen, wenn möglich)
  • 0,9 kg Linguica Wurst (geräucherte Schweinswurst mit Knoblauch und Pfeffer), schneiden Sie diese in 5-Zentimeter-Scheiben
  • 0,9 kg kleine Kartoffeln wie Fingerlinge oder Butterball
  •  6-Maiskolben (mit Schale)
  • 6 Frühlingszwiebeln
  • 0,9 kg Meeresalgen
  • Hochwertiges Natives Olivenöl extra
  • Meersalz
  • Romesco Sauce (siehe unten)
  • Knoblauchbutter (siehe unten)
  • Brot

Erste Schritte:

Bevor Sie zum Strand oder in den Garten gehen, kochen Sie die Kartoffeln im Salzwasser. Geben Sie die Knoblauchbutter in eine hitzebeständige Schüssel, die Sie neben das Feuer stellen können, damit die Butter langsam schmelzen kann.

Bereiten Sie zwei identische Päckchen aus Alufolie vor (jeweils die gleiche Menge): Muscheln, Garnelen, gekochte Kartoffeln und Stückchen der Linguica Wurst. Fügen Sie ein Bisschen Olivenöl und Salz hinzu und verpacken Sie das ganze fest zusammen.

Die Grillbox anzünden: Wenn Sie am Strand angekommen sind, füllen Sie den Eimer mit Meereswasser und weichen Sie darin die Maiskolben und die Zwiebeln ein, für etwa 30 Minuten. Die Meeresalgen können Sie auch in den Eimer geben. Schütten Sie den gesamten Sack Holzkohle auf das Holzkohlgitter Ihrer La Caja China Grillbox und zünden Sie es an. Wenn die Holzkohle bereit ist, verteilen Sie diese gleichmäßig über die gesamte Oberfläche.

Heben Sie den Grillbox-Deckel und legen Sie die eingeweichten Meeresalgen auf die Unterseite des Grills, als Basis für die Meeresfrüchte. Stellen Sie die zwei Folienpäckchen hinein und legen Sie die noch lebendigen Hummer auf die Meeresalgen. Schließen Sie die Grillbox mit dem Deckel. Das Essen wird etwa 45 bis 60 Minuten gegrillt.

Nehmen Sie die eingeweichten Zwiebeln und Maiskolben aus dem Eimer und legen Sie sie direkt auf die glühende Holzkohle, solange bis die Maiskolben schön gleichmäßig gegrillt sind und die Zwiebeln ganz schwarz werden (etwa 20 Minuten). Nehmen Sie die Maiskolben heraus und wickeln Sie die Zwiebeln in Zeitungspapier ein, damit sie noch ein Bisschen garen. Wenn die Zwiebeln abgekühlt sind, schneiden Sie die schwarzen Schichten von den Zwiebeln ab. Dann können Sie die äußere Hülle von den Maiskolben entfernen. Wickeln Sie die Zwiebeln und die Maiskolben in Folie und stellen Sie sie in die Nähe des Feuers, damit Sie schön warm bleiben.

Nach 45 Minuten, schauen Sie nach den Meeresfrüchten. Die Hummer sollten hellrot sein und die Muscheln sollten alle offen sein. Wenn nicht, lassen Sie sie weiter garen.

Wenn das Essen fertig ist, können Sie es auf den Tisch stellen (vergessen Sie nicht auf die Maiskolben und die Jungzwiebeln), die Sie vorher mit Zeitungspapier abgedeckt haben. Zu den Zwiebeln, Kartoffeln und Maiskolben passt super die Romesco Sauce, zu den Meeresfrüchten Knoblauchbutter. Wenn Sie aufgegessen haben, wickeln Sie die Essenreste ins Zeitungspapier und werfen Sie diese in einen Abfallkorb. Dann können Sie unbekümmert ins Meer springen und sich waschen!  

Will’s Knoblauchbutter:

Für ca. 2 1/2 Tassen:

  • 0,5 kg salzfreie Butter, weich
  • 2 Esslöffel frisch gehackter Knoblauch
  • 1 Esslöffel gehackte Schalotten
  • 1 Esslöffel koscheres Salz
  • 1 ½ Teelöffel Zitronensaft
  • 2 Esslöffel gehackte Petersilie

Geben Sie die weiche Butter in die Schüssel eines elektrischen Standmixers mit Schneebesen. Fügen Sie Knoblauch, Schalloten, Salz und Zitronensaft hinzu. Mixen Sie bei mittlerer Geschwindigkeit, bis die Butter fast weiß und cremig ist. (beim Mixen kommt sehr viel Luft in die Butter, wodurch sie eine cremige Konsistenz hat, wenn geschmolzen).

Fügen Sie die gehackte Petersilie hinzu und mixen Sie solange, bis die Petersilie gleichmäßig verteilt ist. Knoblauchbutter können Sie im Kühlschrank in Schnellverschlussbeuteln aufbewahren und auf Raumtemperatur bringen, wenn benötigt. Geschmolzene Butter ist die perfekte Sauce für Meeresfrüchte oder ein vorzüglicher Aufstrich für jede Art von gegrilltem Fleisch, da es den Fleischgeschmack besser zum Ausdruck bringt.  

Romesco Sauce (Für etwa 2 Tassen):

  • 8 Dosen Piquillo-Paprika (kann auch gerösteter Paprika sein)
  • 1/3 Tasse geröstete Haselnüsse
  • 1/3 Tasse ganze geröstete Mandeln
  • ¾ Tasse gerösteter Knoblauch (püriert)
  • ½ Tasse Basilikumblätter
  • 4 Sardellenfilets
  • 2 Esslöffel Sherry-Essig (oder Weinessig )
  • ½ Tasse Natives Olivenöl extra
  • 1 Esslöffel Harissa (tunesische scharfe Gewürzpaste)

Geben Sie alle Zutaten in eine Küchenmaschine oder in eine Schüssel und mixen Sie diese mit einem Handmixer, bis eine Pesto ähnliche Textur entsteht. Mit Salz würzen. Die Romesco Sauce kann als Dip für gedämpftes Gemüse, als Sauce für Meeresfrüchte oder als Anstrich auf Brot bzw. für Sandwiches verwendet werden.
